Kailey's Box Lunch Tuna Rollwich

Trying to recapture one of my favorite parts of summers past!

When I was a kid, I had the good fortune of visiting my grandparents and other extended family up on Cape Cod. We'd go up for at least a few days every summer and enjoy the beaches, hiking trails, mini golf, local shops and - especially - the food. There's nothing like getting some fried fish after a day on the beach, or going to a lobster pool on the water where you can watch the sun go down over the marshes!

Unfortunately, my grandma sold the Cape house after my grandfather passed away, and it's been a while since I've gotten to enjoy some of my favorite Cape Cod treats. But as much as I miss the ice cream and fried shrimp, there's one thing I crave over everything else, and any attempts at recreating it just don't do it justice.

I'm speaking, of course, about the wraps at Box Lunch.

Guacamole with Grace and Kailey

A weekend favorite we're always dying to bring out again.

Whenever my sister's home from school, there is a huge demand for her to make her famous guacamole, especially on weekends. This stuff goes fast, and if you don't take your spot at the coffee table and swoop in with enthusiasm, you don't get any. It truly is a case of you eat or you don't get any in the Game of Guacamole.

Sorry, that was bad.

Honestly, I didn't used to like guacamole much, but after trying some at a restaurant out of desperation - I was starving and our food was taking forever to arrive - I've become a fan, much to the disappointment of my other family members because that means one more person to compete with for it.

I've been wanting to share this with you guys for months, and Abby and I finally found a time to do it this weekend! Since Grace and Kailey are our Girl of the Year dolls and this really isn't a historical recipe, they're hosting this post, and my sister got to be the hand model you see in most of the pictures.

Kailey's Piña Coladas

Yes, we like piña coladas and getting caught in the rain, or so the song goes.

My younger brother has a certain fondness for all things tropical, and has since he was a kid. His dream job when he was maybe six years old was being a professional soccer player by day, who also moonlighted as a tiki carver in Hawaii during the off season. Needless to say, when he found out I wanted to try my hand at making piña coladas while he was away at camp, he pretty much insisted I swap my schedule around so he could try one for himself.

I am actually not a huge fan of piña coladas, so I'm not entirely sure why I decided I really wanted to make one. This is especially odd to me because I actually really like coconut and pineapple, so you'd think a drink that's basically a combination of the two would be right up my alley. In any case, I decided to make them, and all things considered, I think it worked out pretty well.

Kailey's Lava Mug Cake

A ridiculously tasty treat that takes less than ten minutes and two bowls to make!

While most people probably only pay attention to April 1st more than most other days in April because of April Fool's Day, for me, it's my younger sister's birthday and that's always what I think of before even vaguely considering playing a prank on someone. She's back at college right now, so real birthday celebrations will have to wait until she gets home, but for the time being, I think I've got something she and anyone else who needs a chocolate fix will really, really enjoy.

Seriously, these things are delicious.

I usually feel bad for telling her about what we've been doing for the blog while she's at school because it's not like I can just mail her the soup I made for dinner, or the chicken I baked, but this is something you don't even need a stove to prepare. It's an incredibly quick recipe that's ready to eat almost immediately, and if you're anything like me, you'll start wanting another one pretty much as soon as the first is gone.

Ice Cream Snowballs with Kailey

A two ingredient recipe that's tasty and easy to make!

We're starting the New Year off with a pretty simple recipe that is - nevertheless - one of my favorite treats to eat in the wintertime. Admittedly, it's something you can eat at any time of the year, but it's something I've always associated with Christmas, and I was actually planning on including it in our posts for last month. Unfortunately, time got away from me and so we're sneaking it in at the beginning of this month to make sure it gets a spot in the sunshine!

Or cloudy gray snowy day, as the case may be.

Cracker Jacks with Kailey

So let's root, root, root for the Red Sox...

I have mentioned before that I'm from New England, so it probably shouldn't come as a surprise to anyone who pays attention to sports at all to know that I probably at least distantly care about the World Series. To be honest, while I haven't been a religious follower of baseball since the Sox traded my favorite player back in 2004, I've been a member of the Church of Boston since infancy. My dad seriously considered naming me "Wade" if I was a boy after the Red Sox's then third baseman Wade Boggs, and apparently, the first baseball game I ever watched as an infant was a Red Sox versus Yankees game, and I started crying once the Yankees came out on the field.

There was a lot of debate over what I should make in honor of the Red Sox making it to the World Series for the third time in my lifetime, and although we talked about nachos and clam chowder and trying to recreate the sausage sandwiches my dad like getting when we're at Fenway, eventually, we decided to go with Cracker Jacks.
